FRESH SUMMER ROLLS WITH AMAZING THREE DIPPING SAUCES

Fresh summer rolls are colorful, healthy and fun to make with any kind of ingredients which are easy to find or you already have at home. Served with delicious and creamy peanut butter or sweet chilli dipping sauce, these summer rolls are great for lunch, dinner or just as a snack in-between.

The rice paper rolls are gluten-free, vegan, and perfect for plant-based foodies. I tried making them for the first time, and it was pretty easy. I already had lot of veggies, noodles, and fruits at home, so I thought I will give it a try, but the secret to deliciousness are the dips.

For this recipe post I created thee amazing dips: sweet papaya chilli, peanut dipping sauce, and avocado mint sauce. This time I made vegan rolls, but you can for sure add meat, such as salmon, tuna, mini shrimps or chicken. They are quick to prepare and easy to customize for everyone’s taste!

THE FILLINGS
Prepare plates with all kind of fillings you want to make your summer rolls. Here are some ideas:

GRAINS

  • Brown rice
  • Rice noodles
  • Thai sticky rice
  • Quinoa
  • Buckwheat
  • Chickpea

VEGETABLES

  • Avocado
  • Cucumbers
  • Carrots
  • Mixed bell peppers
  • Red cabbage
  • Clery
  • Lemons
  • Radish
  • Corn
  • Beans
  • Edamame beans
  • Lettuce
  • Beetroot

FRUITS

  • Figs
  • Mango
  • Papaya
  • Strawberries
  • Passionfruit
  • Blueberries
  • Banana
  • Pineapple

EXTRAS

  • Tofu
  • Sesame seeds (black & white)
  • Chia seeds
  • Poppy seeds
  • Pumpkin seeds
  • Pistachio nuts
  • Peanuts
  • Pecannuts
  • Mint leaves
  • Coriander leaves
  • Basil
FOR THE PAPAYA SWEET CHILLI DIPPING SAUCE
  • 1/2 cup papaya
  • 1 teaspoon chilli paste (optional)
  • 1/2-1 tablespoon sweetener such as maple syrup, agave, etc.
  • 1/3 clove garlic, minced
  • 1 tablespoons lime juice
  • Pinch of salt
PEANUT DIPPING SAUCE
  • 1/3 cup natural peanut butter
  • 1-2 tablespoons of lime
  • 2 tablespoons of maple syrup
  • 1/2 tablespoon freshly grated ginger
  • 1 tablespoon sesame oil
  • dash of hot water to thin, add more if needed
  • Garnish with white and black sesame seeds
AVOCADO MINT DIPPING SAUCE
  • 1 avocado
  • 1/4 cup plain coconut yogurt
  • Juice of 1/2 lime
  • 1 cup of mint leaves
  • 1/2 garlic clove
  • 1/2 teaspoon salt
  • Pinch of pepper
  • 1/4- 1/2 cup water to thin (or less depending on the consistency)

For all of the above dip recipes, I end to add all the ingredients to a small blender, then I’ll add warm water, as needed, to thin the sauce down to perfect dipping consistency.
